Healthy Avocado Alfredo Recipe
I had so many requests for the recipe for this healthy avocado alfredo sauce after I posted this picture on Instagram last week, so I thought I'd reshare it.
It's super easy to make, but be careful with the garlic! Two cloves is PLENTY. I'd almost recommend starting with one and then adding the other once you taste it.
If you add too much (like I did this last time) you can add some extra lemon juice, salt and an extra half of avocado to balance it out. But it doesn't keep well so you kind of waste the avo (sad face).
Healthy Avocado Alfredo Sauce
2 medium sized ripe Avocados, pitted1 lemon, juiced + lemon zest to garnish
2 garlic cloves, to taste
1 tsp kosher salt, or to taste
1/2 cup Fresh Basil
3-4 tbsp extra virgin olive oil
Freshly ground black pepper, to taste
¼ cup Pine nuts (optional)
Grated fresh parmesan cheese (optional)
4 servings/6 oz of your choice of pasta (I used whole-wheat linguine)
