The Fit Girl's Kitchen

So I am one of those people who likes cold food. Cold pizza, cold pasta, cold sandwiches. I've even been known to order iced coffee in the winter. I know, I'm crazy.

One of my favorite summer foods that gets me jazzed is cold soup. I always forget about the existence of gazpacho (mainly since we spend half of our year in the midwest in denial that we live in a tundra) and I get so excited when I remember that it is a thing.


This is my first time actually making it myself, and it was SUPER easy. Everything goes right into the blender. I also let it chill in the fridge for a few hours before we had it for dinner.

For those who follow my Instagram feed and warned me that my mint would take over - well played. It has gone WILD.

Watermelon mint gazpacho

Be prepared for several mint-based posts in the coming weeks while I try to use some of this up. I also wanted to put cucumber in this recipe but didn't have one on hand (the onslaught of zucchini in my fridge fooled me) and I am definitely going to incorporate that next time. Enjoy!

Watermelon and Mint Gazpacho Soup

4 cups cubed watermelon
12 mint leaves, chopped
Juice of 1 lemon
1 red pepper, chopped
1/2 sweet onion, chopped
1 tablespoon olive oil
1 tablespoon minced ginger
3 tablespoons honey
1 tsp garlic salt
1 tsp crushed red pepper
1 tsp worcester sauce
Salt & Pepper to taste

So you may be asking, why am I chopping all of this stuff if its just going in a blender? I like my soups a little chunkier, so I didn't want my blender to have to work too hard. Plus, the blender isn't that large so the stuff needs to fit in nicely.

Start with blending the watermelon first. I reserved about a cup or so to put in at the very end to make it chunky again. The watermelon juice will also help pull the harder vegetables into the blades. (I have blending techniques DOWN. See here).

After the watermelon is blended, add the mint. (I used the lower settings on my blender/food processor for all - puree to start, then slowly worked my way down to mix, only for about 15 seconds at a time.)

Chop the mint to start to release the herb flavor BEFORE it goes in.

Add the rest of the ingredients, working in batches. I added mine in the order shown, raw vegetables separately. (Red pepper, onion, olive oil, ginger, honey, garlic salt, red pepper, worcester sauce)

Once all is blended, add the remaining watermelon and mix on low to give the soup some texture.

Stick er in the fridge to chill for an hour or so, then garnish with fresh mint and serve.

What is SUP Yoga?

SUP or standup paddleboard yoga is a fun way to bring a sense of play and balance to your practice. Doing yoga on a floating mat is fun, challenging and peaceful - all at the same time. Basically you feel like Pocahontas floating down a beautiful lake on a paddleboard, and then we get to do some fun basic yoga too.

Do I need previous yoga experience?

No, this will be an all levels class that is easy to follow. As long as you can identify head, shoulders, knees and toes, you'll be just fine.

Do I need previous paddleboard experience?

Nope, I'll take you through all of the basics of paddleboarding before we head out, and you'll have a chance to paddle around before we start the class. As a WPA certified instructor, I can help you with paddle techniques, stopping, turning and everything you need to feel comfortable on the water.

This is my 4th time on a paddleboard. Ever. It's not that hard I promise.

What should I bring?

Bring water-friendly, moisture wicking clothes that you can move around in. (A swimsuit is fine if it is super hot, but you will be spreading your legs a little so...I tend to opt for bottoms with a bit more coverage). Also bring: a water bottle, a towel for after and a waterproof bag if you plan on taking your phone out with you.

Will I get wet?

Plan on getting a little wet. I won't make you do any crazy yoga moves (but if you want to try out a headstand, by all means!) but you will get a little wet when we are sitting and lying on the boards. Trust me, savasana on a floating board at sunset...is totally worth it.

Weather/Cancellations
I will be out on Pewaukee Lake each Sunday regardless before class begins. If there is an extreme weather situation, check the Koha FB page and/or the FGK FB page for updates. Otherwise, paddle on!

Recently, several articles have come out warning about the harmful chemicals in sunscreen. (I shared one of these on the FGK facebook page yesterday.)

Additionally, a major study was released which found that women who avoided sunbathing during the summer are twice as likely to die as those who sunbathe every day.

Sooo...the sun is good for us? We shouldn't use sunscreen? All of the snowbirds frying themselves down in Boca Raton are geniuses?

As a lover of the sun, I've decided to summarize what I have found about our frienemy in the sky. I also used to summarize articles on industry trends for hedge funds all day long, so this is totally up my alley ;)

Fact or Myth: Sunscreen is Bad for You

Ok so anything that you put or ingest into your body that has chemicals that you can't pronounce or buy individually is probably not the best for you. That being said, I know I've been putting things onto and into my body for 30 years, and I haven't died yet.

The most disturbing article I read yesterday was warning against the chemicals released in spray on sunscreen - which become airborne and then ingested directly into the lungs. Mainly by children.

This article from the Huffington Post issued a warning from consumer reports against using spray on sunscreen on children.

"Consumer Reports tested sunscreens in the past and found that those containing titanium dioxide and zinc oxide could have nanoparticles -- particles known for causing developmental issues in animals." - (source Huffington Post)

If it causes developmental issues in animals, I would probably think twice about putting it on my kids. The FDA began investigating spray on sunscreen in 2011 and still haven't released anything (and probably never will since everyone is in bed with everybody else in DC) SO my takeaway is - put the tube stuff on them.

Even better yet - stick them in some sun-protective swimwear. When I was in Bali, I encountered many Australian families vacationing and ALL of the kids were in long sleeves. I talked to one of the parents and she said the kids didn't know any different - they thought it was cool, and she didn't have to worry about reapplying.

Takeaway:

Avoid the spray. Use the cream, find naturaler stuff, make your own or wear some sleeves like the Aussies do.

Fact or Myth: The Sun Causes Cancer

Here's where we have to look at bioindividuality and genetic predisposition for certain kinds of cancer and diseases. Researchers "aren't sure" which types of chemicals can cause cancer, but one thing is for sure - we know which chemical nutrients can PREVENT and COMBAT certain types of cancer. One of these is Vitamin D.

"In the USA, vitamin D deficiency is at epidemic levels. Ironically, vitamin D deficiency can lead to aggressive forms of skin cancer. A ground-breaking 2011 study published in Cancer Prevention Research suggests that optimal blood levels of vitamin D offers protection against sunburn and skin cancer." (source RealFarmacy.com)
Vitamin D deficiency has been linked to multiple types of cancers, including the most deadly types of breast cancer.


Basically, avoiding the sun altogether AND using sunscreen blocks the body's ability to absorb UVB rays and naturally produce vitamin D3. If this is your MO, consider taking a Vitamin D supplement. I take them in the winter so I don't lose my mind.

Takeway: 

A little sun exposure every day is what the body needs. There is only so much Vita D your body can produce, so don't fry your butt off. This article does not discuss skin elasticity and wrinkles!

Conclusions

A little sun can't hurt. In fact, your body NEEDS it to produce essential vitamins. The sun is also a dangerous burning ball of gas in the sky so it's not to be used without some caution. Just like an open flame can cook your food (yay!) it can also cook your skin if you get too close to it.



My friend Christa put it best when we were discussing this topic last night: "Basically, we should just be living the way God intended us to."

Sun is in the sky, it grows our food. We have trees for shade so we don't get too much. But a little is just fine. So in summary: Sun's out. Guns out.

I absolutely love this salad for summertime parties. It's simple, it's fresh and super easy to make for groups.

You can play around with the ingredients to make as little or much as you want (I usually buy my watermelon based on the size salad I want to make) or just make a mini for dinner.

Five ingredients, that's it - and you can't screw it up because well, it's watermelon.

Torn mint leaves
Baby Arugula
Crumbled Feta cheese (the fresher the better!)
Good Aged Balsamic

Dice the watermelon to the quantity desired. I didn't include measurements since this salad can range in size depending on your dinner group, bowl size and the watermelon you purchase.

This is an entire, fairly small sized round seedless watermelon.

After chopping, add 2-3 large handfuls of the baby arugula and torn mint leaves. I like to tear the mint instead instead of chopping it up.

Mix the greens and watermelon together. The greens will wilt a little so don't worry if your bowl looks like it might overflow when you add them.

Add crumbled feta and toss. Drizzle with balsamic if desired and add a touch of salt.

Farro Arugula Salad with Grilled Shrimp and Feta

I had the honor and pleasure of spending this past Tuesday with my lovely friend Amelia, a talented photographer and fellow Bali yogini, as we took some pictures for my new website and company FitGirl Wellness.

Amelia's story is one of the most emotional and inspirational that I have personally known; she is also one of the strongest people I know.

I didn't really get to meet Amelia until we arrived in Bali, and after spending the first full day in silence, the remainder of our trip was spent really getting to know one another on a spiritual level. I knew that she had been diagnosed with cancer, was in the process of completing her chemotherapy treatments, and the doctors had just BARELY granted her clearance to take the trip. Her hair was just beginning to grow back, and her scars made it hard for her to practice like rest of us.

But she was there in the shala, every morning, wearing some earthy, airy fabulous scarf or tunic, camera in tow, poised to capture our practice when she had to take rest from her own.

We didn't discuss the details of her cancer really until we took a break to eat lunch this week... I did not realize that after living in New York for three years, she took a quick weekend trip home to consult with a family doctor about some odd symptoms she was having and was diagnosed on the spot - not returning to her Brooklyn apartment until six months later to move her things back home.

But Amelia is so much more than this story. She is truly one of the most lovely, beautiful people I have ever met. Her light, loving and airy personality is reflected in every photograph she takes. I am so honored and lucky to have been able to spend the day shooting with my friend; this is just a taste of some of the gorgeousness she was able to capture right in my own backyard.




Ok sorry this was supposed to be a post about salad. We had a fabulous lunch together on my patio in between shooting there and the beach, but that seems kind of ridiculous to talk about now. However the salad was damn delicious so I will share the recipe as planned.

I also had a little cucumber mint water for us to sip on during the day. Super easy to make and super refreshing.


We jammed out to Michael Jackson, we got creative with yoga props to sit on, and we got super creative with a bag of Milorganite when the wind kept blowing away the our photo reflector.

And we got to spend the entire day outside. Which we agreed, was the best. Well, after agreeing that our new JOBS were the best, feeling so much gratitude for being able to do what we love.

Ok sorry the salad. It's delish.

Farro Arugula Salad with Grilled Shrimp and Feta

(measurements are guesstimated. I eyeball everything. Go with what looks good to you)
2 handfuls baby spinach
2 handfuls baby arugula
3/4 cup cooked farro
1/2 cup crumbled feta
Fresh lemon juice
Salt & Pepper to taste

Dressing
Combo of Basil Infused Olive Oil and 18 Year Aged Balsamic from Oro di Oliva (any good olive oil and balsamic will do)

Shrimp
Pre-marinated and prepped cajun shrimp skewers from Whole Foods (buy them raw, cook right before eating or similar recipe here)

Farro Arugula Salad with Grilled Shrimp and Feta

I made 1 cup of (uncooked) farro on Monday night and it made enough to incorporate into my salads for the entire week. Farro is a nutty, superfood grain that's chock full of fiber, magnesium and is classified as a "smart carb". I like to think of it as the orzo of the grain world.


Combine spinach, arugula, salt and pepper in large mixing bowl. Add in dressing to taste, then mix in cooked farro and feta. Squeeze fresh lemon on top.

While you are prepping the salad, grill the shrimp or sear on the stove using coconut oil over medium-high heat, 1-2 minutes per side. The shrimp are tiny, so they will cook in under 4 minutes total.

I try to keep this blog as authentic as possible, so buying the pre-prepped shrimp was a great time saver for getting this salad on the table in under 15 minutes. If you are making your own, make sure to soak the skewers first so they don't burn.

All in all, we were able to enjoy a fabulous lunch outside with some aged cheddar and fig spread, which we both agreed would have gone VERY well with a glass of wine...but alas, we had work to do.
