MKE Foodie Fitness Fete Recap

Last week I had the amazing opportunity to get together with some fellow foodie fitness bloggers (which I was excited to learn is actually a thing!) in Milwaukee and share healthy recipes and fitness tips. It was so great to meet so may other people who share my interests and get some great recipes out of it too!



We were lucky enough to have an amazing space donated by the Mandel Group to not only be able to bring food to share, but do some live cooking demos as well!


That's our fearless leader & organizer, Shelia Wordell, cooking up a Blue Cheese Walnut Spinach Pasta Salad with Avocado (be still my heart).


We all brought a dish that fit into a theme like pre-race meal, post-race snack, etc.; I made a Red Quinoa Avocado Salad, which is one of my go-to dishes on any race week.


This is one of my favorite pre-race day meals. I cook up a whole batch and eat it with baked salmon or grilled chicken breast 1-2 days before my race.
