The Fit Girl's Kitchen

Last week I posted this picture of my totally swollen hand and my go-to-detox fix, hot water with lemon:

I truly woke up feeling like garbage. I was SO bloated and gained almost 4 pounds overnight. Now, I knew it was mainly water retention but worse than that was how I felt. The feeling was all too familiar. 

I used to feel like that ALL. THE. TIME. Meaning I constantly felt cloudy and bloated almost every morning. I didn’t realize that I felt like shit until I discovered what it felt like to actually feel GOOD in the mornings. Energized. Light. Clear.

My first taste of this out of the clouds feeling came after I did my first cleanse several years ago. I’ve posted on this before, but I did one of the GNC cleanses called “Be Well”. Not a crazy pants all juice cleanse - this involved some supplements and eliminating processed foods. Only whole foods were allowed. And I could not believe the difference it made.

Slowly, I began buying less and less of my old standbys at the grocery store, avoiding packaged foods and staying away from processed junk when I was eating outside my house. It did take time, but I truly have never felt better in my life.

After chatting with my friend Julia over at Tartan & Sequins, she asked if I had ever thought about sharing what I ate on my blog. (She has also been on a kick ass route to revamping her health, which she has documented over the past year.) I told her that honestly, I just cut out as many processed foods as possible - and our challenge was born.

Processed Food

So how do you define 'processed food?' There are varying interpretations, but Julia and I are focusing on this one: Nothing out of a box, can, bag, bottle or package that has more than 5 ingredients listed on the label. Each ingredient should be a “real” food - no chemicals, preservatives or something that you couldn’t buy individually.

Now, there are some grey areas - like if an ingredient is something called “kale powder”. Theoretically, you could powder kale if you had the right instructions and tools. I let things like that slide, mainly because if something has an ingredient like kale powder in it, there probably aren’t any preservatives in there anyways.

And so, as we embark on this quest, we invite you all to do the same, because well, isn't everything more fun with your friends?

  • To promote the eating non processed foods, local foods or foods with five ingredients or less 


How it Works 

Each week of the challenge will have a new theme:
  • Week 1 - Mind your labels 
  • Week 2 - Pantry purge 
  • Week 3 - Cook 
  • Week 4 - Find your balance 


How to Participate 

  • Check the @fitgirlskitchen and @tartanandsequins Instagram and Facebook accounts every Monday for more on that week’s theme and how to participate in the challenge.
  • Share pictures of how you are incorporating the theme into your week by using the tag #fiveorless. At the end of each week, we will select one winner* and share how they best completed that week’s theme. *At the end of it all, you will all be winners because you should be feeling pretttttty amazing. 

So to get started, let’s tackle Week 1.

Week 1 - Mind Your Labels

Start paying attention to foods you buy frequently or eat repeatedly during the week. What are you REALLY putting into your body?
  • Do: Start to slowly eliminate or find substitutes for foods you eat frequently (ie, switch to natural or freshly ground peanut butter instead of your normal Jif, try a sprouted bread instead of your normal go-to.) 
  • Share: Show us your most shocking foods that you thought were healthy (also any scary food label) or a smart substitute* you are making for something you eat frequently. 

*General rule of thumb is you should be able to pronounce everything on the label and purchase each ingredient outright if you wanted to. (Do you know where to buy monosodium glutamate or red40? Neither do we.)

Farro Arugula Salad with Grilled Shrimp and Feta

I had the honor and pleasure of spending this past Tuesday with my lovely friend Amelia, a talented photographer and fellow Bali yogini, as we took some pictures for my new website and company FitGirl Wellness.

Amelia's story is one of the most emotional and inspirational that I have personally known; she is also one of the strongest people I know.

I didn't really get to meet Amelia until we arrived in Bali, and after spending the first full day in silence, the remainder of our trip was spent really getting to know one another on a spiritual level. I knew that she had been diagnosed with cancer, was in the process of completing her chemotherapy treatments, and the doctors had just BARELY granted her clearance to take the trip. Her hair was just beginning to grow back, and her scars made it hard for her to practice like rest of us.

But she was there in the shala, every morning, wearing some earthy, airy fabulous scarf or tunic, camera in tow, poised to capture our practice when she had to take rest from her own.

We didn't discuss the details of her cancer really until we took a break to eat lunch this week... I did not realize that after living in New York for three years, she took a quick weekend trip home to consult with a family doctor about some odd symptoms she was having and was diagnosed on the spot - not returning to her Brooklyn apartment until six months later to move her things back home.

But Amelia is so much more than this story. She is truly one of the most lovely, beautiful people I have ever met. Her light, loving and airy personality is reflected in every photograph she takes. I am so honored and lucky to have been able to spend the day shooting with my friend; this is just a taste of some of the gorgeousness she was able to capture right in my own backyard.




Ok sorry this was supposed to be a post about salad. We had a fabulous lunch together on my patio in between shooting there and the beach, but that seems kind of ridiculous to talk about now. However the salad was damn delicious so I will share the recipe as planned.

I also had a little cucumber mint water for us to sip on during the day. Super easy to make and super refreshing.


We jammed out to Michael Jackson, we got creative with yoga props to sit on, and we got super creative with a bag of Milorganite when the wind kept blowing away the our photo reflector.

And we got to spend the entire day outside. Which we agreed, was the best. Well, after agreeing that our new JOBS were the best, feeling so much gratitude for being able to do what we love.

Farro Arugula Salad with Grilled Shrimp and Feta

(measurements are guesstimated. I eyeball everything. Go with what looks good to you)
2 handfuls baby spinach
2 handfuls baby arugula
3/4 cup cooked farro
1/2 cup crumbled feta
Fresh lemon juice
Salt & Pepper to taste

Dressing
Combo of Basil Infused Olive Oil and 18 Year Aged Balsamic from Oro di Oliva (any good olive oil and balsamic will do)

Shrimp
Pre-marinated and prepped cajun shrimp skewers from Whole Foods (buy them raw, cook right before eating or similar recipe here)

Farro Arugula Salad with Grilled Shrimp and Feta

I made 1 cup of (uncooked) farro on Monday night and it made enough to incorporate into my salads for the entire week. Farro is a nutty, superfood grain that's chock full of fiber, magnesium and is classified as a "smart carb". I like to think of it as the orzo of the grain world.


Combine spinach, arugula, salt and pepper in large mixing bowl. Add in dressing to taste, then mix in cooked farro and feta. Squeeze fresh lemon on top.

While you are prepping the salad, grill the shrimp or sear on the stove using coconut oil over medium-high heat, 1-2 minutes per side. The shrimp are tiny, so they will cook in under 4 minutes total.

I try to keep this blog as authentic as possible, so buying the pre-prepped shrimp was a great time saver for getting this salad on the table in under 15 minutes. If you are making your own, make sure to soak the skewers first so they don't burn.

All in all, we were able to enjoy a fabulous lunch outside with some aged cheddar and fig spread, which we both agreed would have gone VERY well with a glass of wine...but alas, we had work to do.

So I have this new place in my heart for breakfast, and when I find new delicious breakfastings - well it just makes me jump out of bed and run downstairs some mornings. And instagram the hell out of some breakfast creations before I've even put my contacts in.

Enter my new love - muesli.

What is muesli you ask? 

Muesli (pronounced “muse-lee”) means “stew” or “mix” because it is a mix of various nutritious grains, nuts, seeds and dried fruits.

So is it the same as granola?

I'll let my friends at Seven Sundays answer this one.

While muesli and granola can look very similar, there are some key differences:

  • Muesli is often less toasted (or completely untoasted, as with our Bircher muesli) so it has a more natural, chewier texture and its nutritional value is less impacted by heat and processing
  • Muesli is made with a broad variety of ingredients, whereas most granolas are primarily made up of oats and a smaller number of other ingredients
  • Most mueslis contain far less sugar than a typical granola, relying on the variety of ingredients and fruits to add flavor and sweetness.
  • Many granolas also include processed oils or fats, whereas our muesli has no added oil or fat.

What does it taste like?

Delicious. I was lucky enough to enjoy some many mornings in Bali since it is a breakfast staple there and in other parts of Europe and in New Zealand - which is actually what inspired two adorable Minnesotans to create Seven Sundays and bring some muesli love to the states.

So when Seven Sundays contacted our local group of foodie fitness bloggers - Olallie MKE - and asked if we wanted some samples to create recipes with and review, I was like YES PLEASE.

And then I picked up my box and almost ate the whole thing in a few days. And flirted with not having enough left to take pictures with. It is the bomb.com.



It just tastes light and clean and I don't feel as weighed down as I do after eating granola. And the SPICES - there are some good spices vibing in this box. And I only had the original.

Plus I dig the fact that it's a midwest company with a grassroots vibe. And their packaging makes me smile:

So we were supposed to come up with a recipe using the museli. And I tried, really I did. I was going to do some coconut almond butter bars or some really awesome looking muffins and then I decided - let's just keep this real.

I really don't like baking. I really am not going to buy a box of this and take time every week to make muesli bars. It's not me. I just want to EAT it. In bowls.

Muesli + Coconut Almond Milk (my other new favorite thing) + Bananas + Chia
(let it soak for like 15 minutes while you brush your teeth and let the dog out. It gets so yummy)

Grab and go, you busy healthypants, you.

Simple. Pour and enjoy. But I do ask that you take the time to savor, enjoy, and eat mindfully - as that is actually what inspired the name for the Seven Sundays brand.

When I launched The Fit Girl's Kitchen in January of 2013, I had no idea what the next 12 months had in store for me. This blog was simply meant to be a creative outlet for sharing my healthy recipes and fitness tips.

Something amazing happened during that time - I found my voice, I identified my passion. To be perfectly honest, I was surprised that people actually wanted to hear what I had to say. I started getting asked for advice and guidance. Something clicked and I realized - I could help others and share my love for living a healthy, happy life as my JOB.  But how?


Suddenly, doors started opening left and right - and I began walking through them. A random interaction on twitter led me to a local group of like-minded, amazing women and I was introduced to the Institute for Integrative Nutrition.


I will graduate with my certification as a nutritional health coach this spring and be licensed as a holistic healthcare practitioner.

Last August, my yoga instructor told me about a teacher training she was planning in Bali. Would I like to go?

I leave for Bali in two weeks and will return mid-march with my 200 Hour Yoga Teacher certification.

So what does this mean for Fit Girl's Kitchen?

After I return from Bali, I will be focusing full-time on building my new venture, FitGirl Wellness. Leveraging the momentum from FGK, I will be offering nutritional health coaching and private yoga instruction through FGW. I am excited, scared, thrilled and nervous but confident that I am ready to begin this next chapter.

So yes, this means that I have officially quit my job (!!!!).

After eight years in corporate america - the last four at an absolutely amazing software company in Chicago - I have given my notice, hung up my hat and traded it all in for a MacBook, yoga mat and pure blind faith to pursue my passion.

Well, I've found it. I know this is what I am meant to do and I am so unbelievably thankful that I am in a position with the freedom and support to take this leap.

FitGirl Wellness will launch April of 2014 and I will begin taking clients for my six-month health coaching program when I return from Bali. (more details on this later!)

I'll be launching this new venture by participating in the next #aimtrue challenge, #nourishwithlove, which is a 10-day instagram challenge started by the very inspirational Kathryn Budig.


The 10-day challenge consists of posting a photo each day with a story corresponding to that day's theme. This particular challenge is asking yogis to combine their love of yoga with their love of good food - right up my alley.

The first theme of the challenge is comfort. Comfort pose, comfort food.

Oddly enough, one of my favorite comfort poses is half pigeon. This pose freaked me out when I first started practicing; I had the tightest hips in the world and I didn't really understand Yin postures or the power of breath. This was the first pose where I learned how to direct breath into specific areas of my body and ultimately find release.

Coupled with comfort food - italian is always going to have it for me.

Lately I've been really into clean pasta with kale, fresh herbs and olive oil. A take on my sauteed spinach with mushrooms, I combine in whole wheat and spelt pasta for a delicious fresh comfort dish. This also uses butter, which is an approved fat in my diet. (real, true butter. None of that margarine garbage.)

Clean Pasta with Kale, Herbs and Olive Oil


  1. Melt 2 tbs butter with olive oil in a saute pan. Add minced garlic, sautee 1 min. Add fresh sliced mushrooms; saute 5-10 minutes. Add 2 tbs more butter.
  2. Add chopped kale (Trader Joe's has pre-chopped bags which are great in a pinch). Saute until wilted, about 5 minutes.
  3. Meanwhile, cook 2-4oz of pasta (I like a combo of whole wheat and spelt). Drain and add to mushroom and kale. Toss to coat.
  4. Season with salt, pepper and herbs of your choice (basil, oregano, etc). Top with freshly shaved parmesan if desired.

I am so excited to share my first round of exciting news with you this week!

A year ago when I came up with the idea for The Fit Girl's Kitchen, I wasn't really sure of what my path was or what this blog would be about. I knew I liked fitness and had a lot to say and teach, and I knew I liked healthy cooking and people seemed to want to know about my recipes.

What I have discovered since this site launched in January is how much I really enjoy writing and teaching people about how to live a happy, healthy, balanced life. I have also been pleasantly surprised to discover that people actually want to hear my advice and now seek me out to provide more of it. And I enjoy doing that more than anything that I have ever done professionally.

So, I am thrilled to announce that I have decided to get my certification as a nutritional health coach!! I have enrolled in the Institute for Integrative Nutrition and one year from now, I will be a licensed Holistic Healthcare Practitioner!

I am so beyond excited that I have found an opportunity to do what I love and will be able to spread my knowledge to help even more people on their path to living a healthy life.

What to expect on the blog

This program focuses mainly on dietetic theory, which is something that has always interested me anyways. Over the next six months, I will be studying all of the various diet concepts (primary, vegan, low-carb, Ayurveda, Zone, etc.) to understand how they work and who would most benefit from them.

While I'm doing this, I will also be experimenting with recipes that will fit into each diet, which I will definitely be sharing on this blog!

The other focus of the course is how to inspire others and generate a movement towards living a healthy active life. I feel like this blog is already a great stepping stone to that, so I am excited to practice even more of what I preach and hopefully continue to inspire others along the way.
